HOW TO MAKE AIR FRYER HASSELBACK POTATOES
- Wash and dry potatoes.
- Slice potatoes into ¼” slices, being careful not to slice all the way through the potato. Lay the flattest side of the potato down on the cutting board and put chopsticks on either side of the potato. Use a knife to make slices all the way down to the chopsticks, which will prevent the knife from going all the way to the cutting board.
- Baste the outside of the potato with butter and generously baste the inside of the potato slices with butter as well.
- Sprinkle each potato with about ½ teaspoon of salt and a pinch of pepper.
- Place potatoes into the air fryer (if your potatoes don’t all fit without stacking, cook in shifts.
- Cook at 350°F for 30-40 minutes. Cook time will vary based on the size of potatoes, the size of the slices, and how many potatoes are in your machine. Potatoes are done cooking when your fork can easily poke the potato and not meet resistance.
- Remove from the air fryer, serve.
HELPFUL NOTES:
- You can buy air fryer specific parchment paper with holes in it for the bottom of your air fryer. This might make cleanup easier.
- Baste your potato with butter again once it’s cooked and air fry for another minute.
- Sprinkle cheese in between the layers of potato and cook in the air fryer for 1-2 more minutes to melt the cheese. Top with your favorite potato toppings or keep simple with salt and black pepper.
HOW LONG DOES IT TAKE TO COOK CRISPY HASSELBACK POTATOES IN THE AIR FRYER?
As with most things, the cooking time is going to vary and this is because different air fryers work a little differently, larger potatoes are going to take more time to become crispy perfection and baby potatoes will take less time, and even the type of potato you use can affect the cooking time.
With that being said, your Hasselback potatoes should be starting to get that beautiful golden brown color by the 30-minute mark, and shouldn’t take much longer than 40 minutes in total.

SUBSTITUTIONS
Even a recipe with only 4 ingredients has substitution options! Here are some common substitution questions and ideas for you.
WHAT ELSE CAN I USE TO SEASON THE HASSELBACK POTATOES?
While this recipe calls for a simple seasoning mix of butter, salt, and pepper, you can also try other seasonings of your choice. Italian seasoning, garlic powder, paprika, taco seasoning- the possibilities are endless (see below for a few more ideas too).
CAN I USE ANY OTHER POTATOES?
You sure can! Yukon Gold potatoes are the next best alternative, but you can also use Maris Pipes or Russets, and the end result should be just as delicious.
CAN I USE SWEET POTATOES?
Yes! Sweet potatoes cook a bit faster than traditional russet potatoes, so make sure to keep an eye on them and reduce the cooking time as needed. You will also want to adjust the seasoning accordingly – sweet potatoes are delicious with a touch of cinnamon or brown sugar added in.
CAN I USE OLIVE OIL (OR ANOTHER OIL) INSTEAD OF MELTED BUTTER?
Yes, you can absolutely substitute olive oil or your favorite cooking oil when making Hasselback potatoes. Just keep in mind that the end result may not be quite as rich and flavorful as with butter – so adjust the seasoning accordingly.
VARIATIONS & TOPPING SUGGESTIONS
If you’d like to dress up your air fryer Hasselback potatoes, there are plenty of options.
From creamy cheese sauces, to crunchy bacon bits, or even a sprinkle of Parmesan for an extra cheesy kick–the possibilities are endless.
You could also top the cooked potatoes with a dollop of sour cream and fresh chives for a classic potato topping combo. Or try adding some chili flakes or red pepper flakes for a spicy kick. Experiment and find your favorite combination!
Here are a few more ideas for you:
- Mix some softened butter with minced garlic to create your own garlic butter mixture. Baste over the Hasselback potatoes with a pastry brush and cook as per the recipe.
When fully cooked, top with cheese and pop back in the air fryer for another minute or two for delicious melted cheese and garlic crispy skin potatoes. - Create your own air fryer cheesy Hasselback potatoes by topping them with a mix of cheddar cheese and parmesan cheese (and any other cheese you’d like to add).
You can add some onion powder to the potatoes before adding the cheese for an extra flavor boost. - Top with a dollop of béchamel sauce (or other creamy sauces) and grated cheese and sprinkle with fresh herbs for extra indulgence.
HOW TO STORE LEFTOVER HASSELBACK POTATOES
Any leftover Hasselback potatoes should be stored in an airtight container and kept in the refrigerator for up to 4 days.
You can also freeze them, but make sure to defrost them completely before reheating.
REHEATING INSTRUCTIONS
To reheat, place the potatoes in a skillet over medium heat or better yet, pop them back into the air fryer for a few minutes until they are heated through. This will help to maintain that crunchy exterior!
FAQS
The best and easiest way to cut the potatoes is to use a very sharp knife and carefully slice into thin slices, making sure not to cut them all the way through by placing chopsticks or even a wooden spoon on either side of the potato.
Large potatoes may take a little longer to cut thin slices but taking the time in the prep is definitely worth it (trust me).
Yes, you can use aluminum foil to help keep the potatoes from sticking to the air fryer basket.
However, it’s not necessary as a well-seasoned potato should not stick at all. Make sure to spray the basket with cooking oil before adding in the potatoes for extra non-stick insurance.
No, you do not have to peel the potatoes. The skin is actually quite delicious and adds a nice layer of flavor and texture. However, if you prefer peeled potatoes then go ahead and peel them before slicing them into Hasselback slices.
If you find that the bottom of the potato is soggy and not crispy, it could be that you’re using too much butter, oil, or cooking spray. This is an easy mistake to make because we’re so used to cooking with oil rather than hot air, but this is why we love air frying.
To fix this, carefully remove your potatoes and clean any oil out of your air fryer basket. Return the potatoes to the air fryer and cook for a further 5 minutes, or until you have crispy skin on the base of the potato.
Also, make sure you are cooking your potatoes in a single layer and not stacking them on top of each other.
An easy way to make the potatoes extra crispy is to soak them in water for around 30 minutes after they have been cut. This will help remove excess starch, and make them crispier. You can use cold water to soak them for better results.
Also, remember to pat them dry before you coat them in the butter and seasoning.
