INGREDIENTS
2pcsRusset Potatoes, (Medium Sized)
2tbspOlive Oil
1tspSalt , (approximately)
1/4cupSour Cream
1/4cupMilk
2tbspButter, (Melted)
1cupShredded Cheddar Cheese , (divided)
1cupCooked Broccoli Florets , (coarsely chopped)
1/2tspSalt
1/4tspPepper
1/4tspGarlic Powder , (optional)
1/4tspChopped Chives , (For garnish (optional))

INSTRUCTIONS
Wash and dry the potatoes well. Rub them all over with the olive oil. Sprinkle the potatoes with salt.
Bake these at 400 degrees for 30 minutes. Then flip them and bake them for another 10 minutes, or until they are fork tender.
Cut each of the potatoes in half the long way. Remove most of the potato from the skins (like a hollowed out boat). Place the potato insides into a medium sized bowl.
To the medium bowl, add the ½ cup sour cream, 2 Tablespoons melted butter, ½ teaspoon salt, ¼ teaspoon pepper, and ¼ teaspoon garlic powder. Use a hand mixer to combine this well.
Stir in ½ cup shredded cheddar and 1 cup broccoli florets.
Divide the filling mixture evenly among the 8 potato halves.
Divide the remaining cheddar cheese among the 8 potato halves as well. (Just sprinkle a little onto the filling of each potato.)
Bake the potatoes at 350 degrees for 7 minutes. (You will have to bake these in batches. Make sure there is room for the air to circulate around them.)
NOTES
Storage Instructions:
Wrap cooled leftovers in plastic and store them in the fridge for up to 5 days. They may also be frozen for up to 3 months.
Other FAQ Suggestions:
Could I just bake the potatoes in the microwave - this seems like it would be a time saver ? Yes! Poke the potatoes all over and bake for 5 minutes on high. Then I like to flip them and bake for another 5 minutes on high. Then you will cut and fill them and finish them off in the air fryer as directed above.
Could I make these ahead of time? Yes, these actually taste better the next day. Make them a day or two ahead if you like. Or, make them and freeze them. (You can freeze them right after filling them if you like.) Then, allow them to thaw completely and bake at 350 for 7 minutes as recommended above. Or, you could bake them from frozen. I would start with 5 minutes at 300 ( just to make sure the centers are thawing and cooking before the outside gets over cooked). Then, finish those up at 350 for another 5 minutes, or until the potato is heated through.
Could I use frozen broccoli in this recipe? Yes, just allow it to thaw before adding it to the filling. You will also want to dry it well so you’re not adding too much moisture.
