Slice the tomatoes into ¼-inch thick slices and sprinkle them with salt, pepper, and sugar (if desired). Set aside.
In a small bowl, pour in the flour.
In a separate bowl, whisk together milk and eggs.
In another bowl, mix together cornmeal, bread crumbs, garlic powder, and paprika.
Spray the air fryer basket with oil spray.
Taking one slice of tomato at a time, dredge it lightly in the flour, dip it in the egg mixture, completely coat it with the cornmeal mixture, then set it in the air fryer. Repeat until the air fryer basket is full.
Generously spray the coated tomato slices with oil.
Cook the tomatoes at 400°F for 8 minutes. Flip them over and generously spray again with oil. Continue cooking at 400°F for another 8 minutes.
