Rinse your baby potatoes and pat them dry.
Slice the potatoes in half, lengthwise, and use a paring knife to make diagonal slits in the potatoes in a diamond pattern, making sure not to cut too deep through the potato but just scoring them.
Add the sliced, scored potatoes to a mixing bowl and pour in olive oil, salt, pepper, garlic powder and chopped parsley. Toss to fully coat.
In a separate bowl, melt half a stick of butter then add minced garlic, pepper and grated parmesan cheese.
Line the bottom of your air fryer basket with foil, making a pouch, then pour in the butter mixture and spread out evenly.
Next lay the sliced, seasoned baby potatoes face down in the butter mixture, side by side but not overlapping.
Air Fry on 400 degrees F for 30 minutes.
Open the basket and let the potatoes cool for about 5 minutes before serving, they will be HOT!
