These Air Fryer Parmesan Potatoes are super crispy on the outside, soft and fluffy on the inside. They’re super versatile, ridiculously easy to put together, and are sure to be your all-time favorite.

🛒 INGREDIENTS FOR THE AIR FRYER PARMESAN POTATOES
- Baby Gold Potatoes
- Olive Oil
- Salt
- Pepper
- Garlic Powder
- Freshly Chopped Parsley
Butter Mixture:
- Butter
- Minced Garlic
- Pepper
- Parmesan Cheese, grated

HOW TO MAKE PARMESAN POTATOES IN THE AIR FRYER
- Rinse your baby potatoes and pat them dry.
- Slice the potatoes in half, lengthwise, and use a paring knife to make diagonal slits in the potatoes in a diamond pattern, making sure not to cut too deep through the potato but just scoring them.
- Add the sliced, scored potatoes to a mixing bowl and pour in olive oil, salt, pepper, garlic powder and chopped parsley. Toss to fully coat.
- In a separate bowl, melt half a stick of butter then add minced garlic, pepper and grated parmesan cheese.
- Line the bottom of your air fryer basket with foil, making a pouch, then pour in the butter mixture and spread out evenly.
- Next lay the sliced, seasoned baby potatoes face down in the butter mixture, side by side but not overlapping.
- Air Fry on 400 degrees F for 30 minutes.
- Open the basket and let the potatoes cool for about 5 minutes before serving, they will be HOT!
HELPFUL NOTES:
- Remember to turn the potatoes halfway through the cooking time to ensure that they’re nice and crispy on both the sides.
- To keep the potatoes from striking to the surface of the Air Fryer basket, you can also layer the basket with some parchment paper.
STORAGE AND REHEATING INSTRUCTIONS:
Got some leftover Air Fryer Parmesan potatoes? You can just transfer them to an airtight container and refrigerate them for up to 3 days.
You can reheat them in the microwave, or air fry them again if you want them to retain that crispiness.
FAQS & SUBSTITUTIONS/VARIATIONS:
You totally can! We’ve used baby gold potatoes for this recipe, but you can totally make do with Russet and Fingerling potatoes too.
To add some more flavor and deliciousness to these classic Parmesan potatoes, you can add some Italian seasoning into the butter mixture.
If you’re not too fond of the texture of leftover Air Fried Parmesan potatoes, and still don’t want to throw them away, you can add them to your breakfast casserole or omelet, or use them as a filling in your wraps.
