Red Potatoes
2 1/2lbssmall red potatoes, washed, dried, and cubed
2tbspolive oil
1/2tspsalt
1/4tsppepper
1tspgarlic powder
1tsppaprika
1tsprosemary
Ranch Dipping Sauce
1/2cupmayonnaise
1/2cupsour cream
1/4cupbuttermilk
2tspfresh lemon juice
1tspdried parsley flakes
1/2tspdried dill
1tspgarlic powder
1tsponion powder
1/2tspsalt
1/4tsppepper

INSTRUCTIONS
In a large mixing bowl, combine potatoes, olive oil, and seasoning for the potatoes. Toss well until the potatoes are evenly coated.
Grease the bottom tray of the air fryer with non-stick cooking spray.
Place potatoes inside the air fryer, covering the bottom tray completely. Cook at 400°F for 18-20 minutes, shaking halfway through.
While the potatoes are cooking, prepare the ranch dip by combining all of the ingredients in a small mixing bowl.
Using a fork, mix the ingredients until fully blended and smooth. Cover and refrigerate until ready to use.
When the potatoes are done, transfer them to a serving dish and serve the potatoes alongside homemade ranch dipping sauce.
NOTES
You can leave the skins on the potatoes for this recipe. It helps enhance the flavor!
