Enjoy this delicious Air Fryer Roast Beef anytime of year! Juicy, tender, and flavorful, this simple roast beef comes together in just 50 minutes.

EQUIPMENT

  • Air Fryer
  • Mixing Bowl
  • Knife

INGREDIENTS

  • 3 lbs beef chuck roast
  • 4 tbsp olive oil, divided
  • 2 tbsp steak seasoning
  • 6 baby potatoes, halved
  • 1 carrot, peeled and sliced
  • salt to taste
  • pepper to taste

INSTRUCTIONS

  • Preheat the air fryer for 5 minutes at 400°F.
  • Rinse the roast and pat dry. Rub the roast with 2 tablespoons of olive oil and sprinkle with your favorite steak seasoning. Place the roast in the air fryer at 400°F for 15 minutes.
  • While the roast sears, toss the potatoes and carrots with the remaining olive oil, salt, and pepper.
  • Once the roast is done searing, turn the air fryer down to 325°F, add the potatoes and carrots to the air fryer basket, and cook for 25 minutes.
  • Check the roast for doneness with a thermometer. The internal temperature should be 145°F. If the roast isn’t cooked through, continue cooking for an additional 5 minutes. If the vegetables are tender, remove them from the air fryer and cover.
  • Once the roast is cooked, let it rest for 10 minutes before slicing.

NOTES

  • Keep the fat on the roast to ensure it stays juicy and flavorful. Remove the fat before serving if you wish.
  • Leftover roast beef makes for delicious sandwiches the next day!
  • Cook time may vary so check the meat often when it’s nearing the end of its cooking time.
