INGREDIENTS
3lbsbeef chuck roast
4tbspolive oil, divided
2tbspsteak seasoning
6baby potatoes, halved
1carrot, peeled and sliced
salt to taste
pepper to taste

INSTRUCTIONS
Preheat the air fryer for 5 minutes at 400°F.
Rinse the roast and pat dry. Rub the roast with 2 tablespoons of olive oil and sprinkle with your favorite steak seasoning. Place the roast in the air fryer at 400°F for 15 minutes.
While the roast sears, toss the potatoes and carrots with the remaining olive oil, salt, and pepper.
Once the roast is done searing, turn the air fryer down to 325°F, add the potatoes and carrots to the air fryer basket, and cook for 25 minutes.
Check the roast for doneness with a thermometer. The internal temperature should be 145°F. If the roast isn’t cooked through, continue cooking for an additional 5 minutes. If the vegetables are tender, remove them from the air fryer and cover.
Once the roast is cooked, let it rest for 10 minutes before slicing.
NOTES
Keep the fat on the roast to ensure it stays juicy and flavorful. Remove the fat before serving if you wish.
Leftover roast beef makes for delicious sandwiches the next day!
