Simple but delicious, these Air Fryer Southwest Egg Rolls are jampacked full of flavor. Colorful vegetables, tender chicken, and melted cheese are a satisfying filling inside a crunchy egg roll wrapper.

How to Make Southwest Egg Rolls in the Air Fryer
- In a large bowl, combine shredded chicken, corn, bell pepper, green onion, black beans, spinach, and cheese.Â
- In a small bowl, whisk together chili powder, garlic powder, salt, cumin, paprika, and onion powder.
- Add the spice mixture to the chicken mixture and stir until well combined.
- Next to a cutting board or clean surface, place a small bowl of water to seal the egg rolls.Â
- Place an egg roll wrapper on the cutting board with one of the corners pointing toward you. Using a â…“ cup measure, pour filling across the middle of the egg roll wrapper. To wrap, lay the bottom corner over the filling, slightly tucking the corner under the filling. Then fold the sides over the middle. Over the remaining part of the wrapper, brush the edge with water and fold it tight over the rest of the egg roll. Â
- Spray the basket, then the top and sides of each egg roll with oil spray.Â
- Place the egg rolls into the air fryer top-side down, then spray the top of the egg rolls (all sides should be covered with oil spray now). Â
- Air fry at 375°F for 5 minutes, flip the rolls, then bake for 5 minutes.
How to Make Southwest Egg Rolls in the Oven
- Pre-heat oven to 425 degrees F and place all of the uncooked egg rolls on a baking sheet lined with parchment paper.
- Bake for 10-15 minutes or until crispy. I recommend flipping them after 10 minutes to help all sides get crispy.
Helpful Notes:
- You may have to cook these egg rolls in batches. They shouldn’t be touching in the basket.
- Try adding chopped jalapenos to the filling if you want to add some spice.
- As you wrap your egg rolls, cover the wrapped ones so they don’t dry out.
Storage and Reheating Instructions:
These egg rolls make for a great snack the next day (if you even have any left)!
IN THE FRIDGE: Store leftovers in an airtight container for 3 to 4 days in the fridge.
IN THE FREEZER: Wrap them individually before placing them in a freezer bag and store them in the freezer for up 2 months. Wrapping them before putting them in a bag will ensure they don’t stick together as they freeze.
REHEATING INSTRUCTIONS: To reheat from the fridge, place the egg rolls in the air fryer at 350°F for 3 to 5 minutes. From frozen, cook them at 350°F for 10 minutes, flipping once.
FAQS
It’s not recommended to use store-bought non-stick spray as it can damage air fryers. I recommend getting an oil mister or spray bottle for your cooking oil of choice.
Cheddar and Monterey Jack cheese work well in place of a Mexican cheese blend. You can use them separately or combine them for this Air Fryer Southwest Egg Roll recipe.
Ensuring the egg rolls have oil on them will get them brown and crispy. If you don’t have spray, brushing them with oil works just as well!
