Air Fryer Enchiladas

Perfect for when you’re craving a savory Mexican meal, these easy Air Fryer Enchiladas are sure to take your taste buds on a ride. You’ll need just 7 pantry staples to make these, and they’re sure to become a hit with everyone in the family.

🛒 INGREDIENTS

  • Chicken breasts
  • Olive oil
  • Taco seasoning
  • Tortillas
  • Black beans
  • Enchilada sauce
  • Mexican cheese

HOW TO MAKE AIR FRYER ENCHILADAS

  • Butterfly the chicken breasts to make 4 pieces (open them up and cut them in half – this way they cook more evenly).  If they are thicker than ¼ inch, then flatten them to that size with a rolling pin.
  • Once the chicken breasts are cut and flattened, rub them with 1 Tablespoon olive oil and season them with the packet of Taco Seasoning. 
  • Place the seasoned chicken in the air fryer and cook at 370 degrees for 6 minutes. Flip the chicken once that time has passed and bake for an additional 6 minutes.
  • Remove the chicken from the air fryer and allow it to sit on a cutting board for a few minutes while you prepare the pan.
  • Prepare the air fryer by lining the bottom and up all of the sides with parchment paper, or use a glass or foil pan.  
  • Slice or shred the chicken breast. (You can use  2 forks using a crossing and pulling motion to shred it.) 
  • Place some enchilada sauce, black beans, cheese and a little of the chicken down the center of each tortilla. 
  • Roll up the tortillas and lay them side by side against each other, across the bottom of the air fryer.
  • Pour on the remaining enchilada sauce and sprinkle on 1 cup of cheese. Bake this covered with foil at 350 for 10 minutes, the uncover and bake for an additional 10 minutes until cheese it bubbly.

HELPFUL NOTES:

  • Fresh herbs can take the flavor of the air fryer enchiladas up a notch. Chopped cilantro and chives can be great choices to add to the enchilada filling.
  • The enchiladas can be stuffed with almost any leftover veggies, meat and even seasoned rice that you have in your refrigerator.

STORAGE AND REHEATING INSTRUCTIONS:

Wrap leftovers well and store them in the fridge for up to 2 days, or in the freezer for up to 3 months.

What Else Can I Add to the Air Fryer Enchiladas?

The enchiladas can be stuffed with a lot of other ingredients apart from just the chicken and the beans. Boiled corn, diced jalapeños, green and red bell peppers, chopped onions and pickled radishes are all great choices.

What Other Kind of Meat Can I Use?

While this recipe calls for the use of chicken breasts, these air fryer enchiladas can also be stuffed with ground beef or ground turkey.

How Do I Serve the Enchiladas?

These flavorful and filling enchiladas can be served all on their own, or can be teamed up with a crunchy salad on the side. You can of course, also pair them with some of your favorite dips and sauces. Sour cream is an absolute classic you can never go wrong with.

Other FAQ Suggestions:
  • Can I use a foil pan instead of parchment paper? That should be fine.  If you have a glass or metal pan that fits into your air fryer, that would work as well.  
  • Can I use corn tortillas instead of flour tortillas? Traditionally, enchiladas are made with corn tortillas and those will work fine in this recipe.  I just found them more challenging to roll and didn’t find that there was a big difference in flavor.
  • Could I substitute ground beef in this recipe? Yes, you will want to cook the ground beef first, which may be done in the air fryer.  Crumble it into the airfryer, sprinkle on the oil and taco seasoning and cook at 400 degrees for 5 minutes.  Then stir the meat mixture and cook for another 3 minutes or until there is no pink left in the meat.
